This special wheel-shaped dessert is a French classic, invented in 1910 by the pastry chef Louis Durand. Paris-Brest was named as such to honor a bike race that runs between Paris and the port city of Brest, in northwest France.
Made of a choux / eclair pastry and filled with hazelnut praline pastry cream, this version is entirely plant-based, which showcases unique techniques, as it is known to be the most difficult dessert to do without eggs.
This Paris-Brest will delight Hazelnut lovers.
Made of choux pastry, hazelnut thickened pastry cream, hazelnut praline, caramelised hazelnuts, and vanilla chantilly topping.
